Oleocanthal and the peppery throat catch
Oleocanthal is the compound most people notice first, even if they do not know its name. Take a sip of a fresh, robust oil and swallow. If it makes you cough or catch in the throat, that is oleocanthal at work.
This is not a fault. It is a sign of a young, well-made oil with a decent polyphenol content. Tasters sometimes rank robust oils by how many coughs they trigger.
Oleocanthal has drawn research attention because it shows anti-inflammatory activity in laboratory studies. Some work has compared the way it behaves to certain anti-inflammatory medicines, though the amounts in a normal serving of oil are far smaller. The EU health claim
In the European Union, authorities have approved a health claim for olive oil polyphenols. The claim relates to protecting blood lipids from oxidative stress. To use it, an oil must contain at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil.
That figure is a useful benchmark. It tells you the polyphenol level that regulators considered high enough to matter. Many mild supermarket oils fall well below it. Why freshness and storage protect them
Polyphenols fade over time. This is the part shoppers most often overlook.
From the moment oil is made, its polyphenol content slowly drops. Heat, light and air speed that decline. An oil that started robust can turn flat and tired if it sits in a warm, bright spot for a year.
A few practical habits keep more of the good compounds intact.
- Buy oil in dark glass or tins, not clear bottles.
- Check for a harvest date, not only a best-before date. Fresher is better.
- Store it in a cool, dark cupboard, away from the stove.
- Keep the cap on and use it within a reasonable time once opened.
