The Australian Olive Harvest Season

Australian olives are harvested in autumn, roughly April to July, and the best oil is pressed within hours of picking. That timing is the single most important fact about Australian olive oil. Because our autumn falls opposite the northern hemisphere, fresh local oil reaches the shelf while imported oil, pressed months earlier and shipped across the world, is already ageing. When the harvest happens

Harvest runs across autumn and can stretch a little either side depending on the region and the season. As a rough guide:

  • April to May: the earlier pickings begin, often for greener, more peppery styles.
  • May to July: the main harvest across the southern states, as fruit ripens and oil content peaks.

Growers choose their picking date carefully. Olives picked greener give a more bitter, peppery, high-polyphenol oil; riper fruit gives a milder, softer oil with more yield. It is a trade-off between flavour, health compounds and volume.

Why picking early and pressing fast matters
